I am finally learning some delicious home cooked meals, and I’d like to share them with you! I will also be posting different wines that I like to serve with these meals as well. So let’s get started!

Grilled Monterey Top Round Beef Steaks

Garlic Shrimp Skewers

Grilled Asparagus

Loaded (Red) Mashed Potatoes

The Top Round Beef Steaks were purchased at Raley’s (on sale). Terra is a genius and had the meat department marinate the steaks for us in a Monterey Marinade. Best of all, this service was free.

These were then cooked on the barbecue (by the men šŸ˜‰ until medium rare because we all liked our steaks a little pink.

The shrimp was also purchased at Raley’s, but Terra made the marinade (recipe below).

1/2 c. lemon juice

1/2 c. olive oil (either extra virgin or regular)

1/2 t. cayenne pepper

2 T. parsley (can be substituted with dill)

4 cloves of garlic (we did one clove for every pound of shrimp)

1 T. black pepper

1 T. salt

You want to marinate these at least over night to let the juices set in.

Then, stick the little guys on skewers (all facing the same direction) and cook on the barbecue. The leftover marinade can also be braised (or brushed over the top) as the shrimp is cooking for some extra flavor.

Grilled Asparagus

Ok – so I usually will not eat asparagus, neither would 3 other people eating this dinner, but this is THE BEST asparagus I have ever had. You make it like this:

Lemon Pepper seasoning

Thyme

Oregano

Onion powder

Parsley

Basil

Olive oil

After washing and snapping off the bottoms, you simply spread out the asparagus evenly onto a cookie sheet, generously apply the olive oil and seasonings, then cook on the barbecue. They way they were cooked for this meal was very crunchy – which was delicious compared to the usual mush of asparagus.

Last but not least – Loaded Red Mashed Potatoes

We peeled 2 potatoes per person eating, and left 3-4 unpeeled for color and protein value.

Boil water – add salt after boiling

Cook potatoes until tender – Drain and mash

Add milk or sour cream for creamy texture. Whip in parsley or chives and bacon bits if desired.

Top with cheddar cheese and let sit until cheese is melted.

All in all – this meal is fabulous, filling, and great for warding off mosquitoes šŸ˜‰
